Agra Mathura's  Famous Bedmi Poori Aloo Sabzi



Ingredients:

For Poori Dough:-----

Urad Daal 1/2 Cup Soaked and Grinded
2 Cup Wheat Flour
Salt To Taste
Red Chilli Powder
1/2 Tsp Carom Seeds/Ajwain
1 Tsp Fennel Seeds/Sauf
1 Tsp Whole Corainder Seeds/Sabut Dhaniya

Street Style Aloo Sabzi:--------

3-4 Boiled Potato (Unevenly slightly mashed)
3-4 Tbsp Mustard Oil
1-2 Dried Red Chilli
Salt to taste
1/2 Tsp Kasuri Methi
2-3 Medium Tomato (Grated)
1 Tsp Turmeric Powder
2 Tsp Dry Coriander Powder
Fresh Coriander Leaves
Red Chilli Powder (optional)
1/2 Tsp Garam Masala
Water

Ingredients:

Serving:2-3 Persons

1/2 Cup Boiled Peeled & Mashed Potatoes
1/4 Cup Paneer
1/3 Tsp Red Chilli Powder
Garlic Pods 2-3 Crushed
Ginger Paste 1/3 Tsp
Salt To Taste
1/3 TspBlack Pepper Powder
1/2 Tsp Pizza Sesoning/Oregano
Carrots Fine Chopped
Sweet Corn
French Beans
Any Vegetable of Your Chioce
Maida+Water Mix
Bread Crumbs
Plain Maida (for Coating)
Pizza Cheese/Mozerella Cheese

*** Eggless Atta Biscuits ****




Ingredients:

1+1/4 Cup Atta/Whole Wheat Flour
1 Tsp Coco Powder
1/4 Cup Powdered Sugar
1/2 Cup Melted Deshi Ghee

Method:

1. Add 1/4 Cup Powdered Sugar in a bowl add Atta in it.
2. Add melted ghee(lukewarm) to it.
3. Mix well make a soft dough.
4.Make cookies out of it by rolling between your palms.
5.Preheat any heavy vessel on gas for 10 minutes on high flame, place a plate or wire stand inside it.
6.Place biscuits on plate and put plate on stand,bake for 10 minutes on low flame.
6.For baking in Otg or microwave (convection mode) preheat it at 180 Degree for 15 minutes.
7.Place the cookies in baking tray and bake it for 10-12 minutes.
8. After that take out cookies cool completely and enjoy.

Eggless Cake| Tutti Fruti Cake






Ingredients

1.5 Cup Maida
Some maida for coating
2 tsp Baking Powder
1/2 Cup Tutti frutti
Oil for greasing
1/2 tsp Vanilla Essence
1 Cup Milk (at room temp)
50 gm Butter (at room temp)
1/4 Cup Condensed Milk
1/2 Cup Powdered Sugar/Icing Sugar

Method

1.Preheat oven/microwave for 15 minutes at 180 degrees.
2.For baking on gas preheat kadhai/cooker/pan for 15 minutes on medium flame.
3.Keep 1 tbsp tutti frutti aside, in rest of all add 1 tsp maida and coat well.
4.In a mixing bowl add 50 gm butter & sugar, beat well untill it becomes creamy.
5.Now add condensed milk and vanilla essence and mix well.
6.Seive maida,baking powder together in a bowl.
7.Add all dry ingredients to beaten butter sugar mix.
8.Add milk gradually and mix it using cut and fold method.
9.Make a smooth batter do not over beat this batter.
10.Bake for 30-35 minutes at 180 degrees in oven or microwave.
11.Baking on gas takes 35-40 minutes.
12.While baking do not check cake again and again it may delayed baking process.
13.Do check after 25 minutes by toothpick or knife.
14.After 40 minutes on gas take out and cool it completely then cut and serve.
8.Grease a bread tin/cake tin, apply butter paper in bottom.
9.Add prepared batter and bake it on medium flame

Karachi Bakery Fruit Biscuits





Ingredients:


1.5 Cup All Purpose Flour (Maida)
0.5 Cup Custard Powder(Vanilla Flavour)
0.5 Cup Butter (at room temp)
1 tsp Rose Essence
1 tsp Baking Powder
0.5 tsp Elaichi Powder(optional)
1 Cup Powder(Sugar)
1/4 Cup Tutti Fruti
1/4 Cup Chopped Cashew

Method:

1.Seive all purpose flour, baking powder and custard powder together.
2.Keep aside.
3.In abowl add butter(at room temp),add powdered sugar stir well form the creamy texture.
4.Add rose essence, tutti fruti,chopped cashew & mix well.
5.Add flour mix and make a soft dough.
6.Divide the dough in two equal parts,roll into cylindrical shape.
7.Wrap the cylindrical dough in clin film and shape the cookie as desired(circular or rectangular).
8.Refrigerate the prepared dough for 15-20 minutes.
9.After 20 minutes take them out of refrigerator.
10.Preheat the oven for 5 minutes at 180 degree.
11.Cut the cookies and bake them inside preheated oven.
11.Bake for 10 minutes at 180 degrees.
12.After 10 minutes turn off the oven and leave the cookies in oven for 5 minutes.
13.After that take them out and cool completely.
14.Fill into air tight container and enjoy with tea.
15.Crispy Fruit Biscuits are ready.

Diwali Special Caramel Kheer without Rice

Ingredients:-


Lauki- 1 Medium sIZE
Ghee- 1 tbsp
Sugar-1/2 cup
Full Cream Milk-1 liter
1 Cardamom


Method:-

1.Peel bottlegourd/lauki and wash it properly.
2.Remove the seeds of bottle gourd if required.
3.Grate the bottlegourd/lauki.
4.Squeeze the grated bottlegourd and remove the excess water.
5.Keep this water aside, do not discard.
6.Take a kadhai or pan add 1 tbsp ghee and add grated bottlegourd/lauki to it.
7.Keep stirring in between and let it cook on low flame untill it becomes soft.
8.If required you can add water which we have taken out of grated lauki.
9.Check lauki if its cooked turn off the flame.
10.Boil 1 liter full cream milk on high flame for 5 minutes or untill it starts boiling.
11.Add cardamom seeds to milk and after boiling reduce the flame, let it boil on low flame for 7-10 minutes.
12.When milk starts reducing and becomes thick then add cooked bottlegourd/lauki.
13.Add chopped dryfuits of your choice and cook this on low flame for another 5 minutes.
14.Turn off the flame and keep kheer aside.
15.Take a pan, turn on the flame and add 1/2 cup sugar to it.
16.Keep the flame low and keep stirring, when sugar melts completely then turn off the flame.
17.Caramel is ready add prepared caramel to kheer and cover this witha plate.
18.After 2 minutes open the plate and stir well.
19.Caramel kheer is ready garnish with dryfruits and serve.

सबसे आसान एकदम करारा मद्रासी मसाला डोसा रेसिपी|Crispy Authentic Madrasi Dosa Secret Recipe|Made Easy




Dosa Batter Ingredients:

3 cup Rice(Soaked Overnight)
1 Cup urad daal
1/2 tsp Fenugreek Seeds/Meathi Seeds(soaked overnight)
Salt to taste


Dosa Masala:

4 tbsp Mustard Oil
6-7 Boiled Potatoes
1 Onion(Fine chopped)
1 tsp Mustard Seeds
3-4 Green Chilles(Fine Chopped)
1 Inch Ginger(grated)
Salt to taste
1/2 tsp Red Chilli Powder
1 tsp Chaat Masala
1 tsp Garam Masala
1 tsp Roasted Cumin Seeds Powder


Method Dosa Masala:

1.Heat a kadhai/pan add 4 tbsp mustard oil.
2.When oil is hot add mustard seeds/rai dana.
3.Keep the flame low add chopped green chillies and grated ginger.
4.Add chopped onion & add turmeric powder,stir fry it untill turns golden in colour.
5.Add pinch of hing and add boiled and mashed potatoes.
6.Add red chillie powder, salt to taste.
7.Turn the flame high add garam masala,chaat masala & roasted cumin seeds powder.
8.Stir fry for 5-10 minutes and then turn off the flame and masala is ready.

Method Dosa Making:

1.Add soaked rice and fenugreek seeds to grinder and make smooth paste, do not add more water while grinding.
(Note-Do not grind whole soaked rice, grind it in small proportion, add very less water as required for grinding)
2.Take out paste in a large bowl.
3.Grind Urad daal too and make a fine paste, take out in the same bowl.
4.Mix well both the paste and add salt to taste.
5.Cover the bowl with plate/lid and let it take rest for 4-5 hrs on hot place.
6.Resting time depends on weather, if you are making dosa in winters then it might take 7-8 hrs for fermentation.
7.After 4-5 hrs dosa batter is fermented well and ready for making dosa.
8.Adjust the consistency of fermented batter by adding some water and salt if required.
9.Heat the dosa tawa on high flame and apply some oil on to it.
10.When tawa is well heated,sprinkle some water and wipe with a cloth.
11.Reduce the flame add dosa batter in the center of tawa and make very thin dosa out of it, by spreading it evenly over tawa. 
12.Increase the flame to high and apply some oil.
13.Gently scratch from sides.
14.When dosa is roasted well then apply masala and fold from sides.
15.Crispy madrasi dosa is ready to serve with sambhar and chutney.

Authentic South Indian Dosa Chutney| Madrasi Street Style Dosa Chutney



Ingredients for Chutney:

1/2 Coconut (coarsely chopped)
2 tbsp Curd
Salt To taste
4-5 Green Chillies
Fresh Coriander Leaves
Fresh Curry Leaves
Cumin Seeds/Zeera
Gralic Cloves(4-5 optional)
Roasted Gram/Bhuna Chana(without skin)


Ingredients For Tadka:

2 tbsp Deshi Ghee
2-3 Dried Red Chillies
1 tsp Mustard Seeds
1/2 tsp Urad Daal
Pinch of Asafetida/Hing
Fresh Curry Leaves

Method:
1.In a mixer grinder add all the listed ingredients except curd.
2.Add some water as required, make a smooth paste.
3.Take out this paste in a bowl.
4.Beat the curd and mix with prepared paste.
5.Now for tadka take a tadka pan add deshi ghee to it.
6.Keep the flame low and add mustard seeds/rai dana and dried red chillies to it.
7.Add hing and urad daal,fry till daal turns golden in colour.
8.Turn off the flame and add this tadka to prepared chutney.
9.Tempting chutney is ready to serve with Idli, Dosa, Uttpam or Vada.
