Turai Sabzi|Ridge Gourd Recipe

Ingredients:
500 gm Turai/Ridge Gourd
2 tbsp Mustard Oil
1.5 tsp Turmeric Powder/Haldi Powder
2 tsp Dhaniya Powder
1/2 tsp Red Chilli Powder
1 Onion (Medium Size Fine Chopped)
Salt To Taste
1/3 tsp Garam Masala(optional)
Method:
1.Peel Ridge Gourd and wash them properly and then cut into small pieces.2.Take a pressure cooker and turn on the flame,add mustard oil to it.
3.When oil is hot enough then add chopped onion and fry till turns golden in colour.
4.Reduce the flame to low and add haldi powder,dhaniya powder,red chilli powder and cook masala's till they leave oil.
5.Do not burn masala if flame is high you can sprinkle some water before adding masala's to cooked onion.
6.When masala starts leaving oil then add chopped turai/ridge gourd.
7.Add salt and mix well with masala.
8.Now cover pressure cooker the lid and turn flame high.
9.Cook turai on high flame for 1 whistle and then reduce the flame and cook for another 10 minutes on low flame.
10.After 10 minutes turn off the flame & let the pressure removed completely.
11.Now open the pressure cooker and slightly mash the ridge gourd and turn on the flame.
12.Reduce the extra water and sprinkle some garam masala and mix well.
13.After 1-2 minutes turn off the flame and then serve hot with roti/paratha's.
