Ingredients for Khasta Kachori Filling:
1.5 cup Urad Daal(soaked overnight)
4 tbsp Gram flour/Besan
1/2 tsp Kasuri maethi
2 tsp Dry Mango Powder/Amchur Powder
1 tsp Turmeric Powder/Haldi
1 tsp Coriander Seeds (coarsely crushed)
1 tsp Coriander Powder/Dhahiya Powder
Pinch of Asfateida/Hing
1/2 tsp Red Chilli Powder
1 tsp Fennel Seeds
2 tbsp Mustard Oil
1 tsp Cumin Seeds
Salt to taste
1 tsp Chaat Masala
1/2 tsp Garam Masala
Ingredients for Khasta Kachori Dough :
1.5 cup All Purpose Flour/Maida
1/4 cup Ghee/Butter
Salt to taste
1 tsp Ajwain
Lukewarm Water
Method for making Khasta Kachori dough:
1.First we make dough for khasta kachori.2.Take maida in a plate add meleted ghee/butter at room temperature.
3.Mash both maida and ghee together and add salt and ajwain to it.
4.Use lukewarm water to make soft dough, keep the dough in covered container.
5.Let it rest for 3-4 hrs before start making khasta kachori's.
Method for making Khasta Kachori Filling:
1.Wash & soak Urad Daal overnight.2.Drain the Urad daal in morning and coarsely grind it using 2-3 tsp of water.
3.Heat 2 tbsp oil in a Kadhai.
4.Add a pinch of asfateida/hing, cumin seeds, sauf/fennel seeds and crushed coriander seeds.
5.Then add 4 tbsp gram flour/besan, keep the flame low.
6.Roast besan untill turn golden in colour then add turmeric powder/haldi.
7.Add red chilli powder, dhaniya powder, roast for a minute.
8.Add grinded urad daal paste and mix well.
9.Roast daal on low flame untill it becomes completely dry.
10.When daal is roasted completely then add kasuri maethi,Amchur powder, Chaat masala & Garam Masala.
11.Mix well all the ingredients and turn off the flame.
12.Let it cool completely before start filling it inside kachori.
13.After 3-4 hrs our dough is ready for making khasta kachori's.
14.Divide the dough into small balls.
15.Roll the balls slightly thick, upto diameter of 4 cm.
16.Put the prepared filling in center of rolled ball.
17.Apply some water on edges and gently fold all the edges together and flaten it.
18.Similarly prepare all the kachori's.
19.Deep fry them in medium hot oil on medium to low flame untill they turns golden brown.
20.Serve hot with your favorite chutney or tea.
